Ingredients

  • 20 large green bell peppers parboiled
  • 2 pounds ground beef
  • 2 pounds pork sausage "Tennessee Pride"
  • 3 medium onions chopped
  • 1 1/2 cups bell pepper chopped
  • 2 cups rice cooked
  • 2 pounds boiled shrimp peeled and chopped
  • bread crumbs

Preparation

Step 1

To parboil peppers: Cut tops of peppers (save tops) and remove seeds and clean peppers. Put in boiling water and boil for 4 minutes. Remove, drain water, and cool.

Chop tops of bell pepper to make up the seasonings. Brown ground meat, pork sausage, onions, and chopped bell pepper together until tender. Remove from heat and drain grease. Return to heat and add salt and cayenne pepper to taste. Add cooked rice and shrimp and stir well.

Wrap parboiled bell peppers in aluminum foil for stability. Stuff peppers with rice dressing and top with bread crumbs. Bake in oven at 350 F for 20 minutes, until bread crumbs are brown.
