  • oil
  • chicken pieces
  • 1 pound smoked sausage
  • 1 large onion chopped
  • 10 chicken bouillon cubes
  • gumbo file to taste

Step 1

Clean chicken and season with salt and pepper. Deep fry chicken until completely cooked. Cut sausage into bite size pieces. Brown sausage in skillet and drain grease. Using equal amounts of flour and oil, make a golden brown roux. When roux is ready add onions and cook until tender. To roux add chicken, sausage, bouillon cubes, and enough water to cover all meat. Cook on medium high heat until gravy is thickened. Serve over rice. Add file to single servings.
