Ingredients

  • 1 c. dried apricots
  • 1 c. sugar
  • 2 Tbsp. soft butter or other shortening
  • 1 egg
  • 1/4 c. water
  • 1/2 c. orange juice
  • 2 c. sifted flour
  • 2 tsp. baking powder
  • 1/4 ts. baking soda
  • 1 tsp. salt
  • 1/2 c. nuts
  • cut-up apricots

Preparation

Step 1

Soak for 30 mins. in warm water to cover the dried apricots. Longer soaking may be required if apricots are unusually dry.

Drain and cut apricots with scissors into 1/4" pieces.

Mix together thoroughly the sugar, butter/other shortening and egg.

Stir in the water and orange juice.

Sift together and stir in sifted flour, baking powder, soda and salt.

Blend in 1/2 c. chopped nuts, cut up apricots.

Line bottom of greased loaf pan with paper. Grease paper. Pour in batter and let stand for 20 mins.

Bake in 350 oven 55-65 mins until wooden pick thrust into center comes out clean. Remove from pan. Take off paper immediately. Let cool on rack.
