Cauliflower Gratin

Ingredients

  • 1 head cauliflower, cut into florets
  • 1 pkg. Knorr Garlic and Herb sauce mix
  • 1 cup milk
  • 1/2 stick butter or margarine, divided
  • 1 cup grated Gruyere or white cheddar cheese, divided
  • 1 cup Italian bread crumbs
  • drizzle of extra virgin olive oil

Preparation

Step 1

Boil the cauliflower florets for 2 minutes; drain and rinse with cold water to stop the cooking process. Set aside.

Make the sauce by combining in a large saucepan the sauce mix, 1 cup of milk and 1 Tbsp margarine; bring to a boil stirring constantly. Reduce heat, add 1/2 c. grated cheese and simmer stirring occasionally until thickened about 3 minutes. Add the cauliflower and combine thoroughly.

Butter an 8x8 baking dish. Pour the cauliflower and sauce mixture into the dish. Melt the remaining butter and combine with the bread crumbs in a small bowl. Sprinkle the bread crumb mixture on the top of the cauliflower. Top with remaining cheese then drizzle with extra virgin olive oil.

Bake at 350 for 35 to 40 minutes until the cheese has melted and the top is golden brown.
