- 3/4 cup ricotta cheese well drained
- 6 ounces goat cheese room temperature
- 1 cup fresh herbs chopped (basil, parsley, thyme, marjoram)
- 1 egg
- Salt to taste
- Freshly-ground black pepper to taste
- Ravioli Dough (see recipe)

In a mixing bowl, thoroughly combine all ingredients. Chill in the refrigerator a few minutes to firm up the filling.
