Welsh Rabbit with beer

  • 2 Tbsp. butter
  • 1 pound grated cheddar cheese
  • 1/2 tsp. powdered mustard
  • dash of cayenne pepper
  • 1/2 tsp. salt
  • 1 tsp. worcheschire sauce
  • 1/2 cup beer at room temperature
  • 2 eggs slightly beaten
  • 4-6 slices of cooked, crisp bacon



Step 1

Melt butter in top part of double boiler. Add cheese a little at a time, stirring until cheese is melted. Add seasoning and pour in the beer mixed with the eggs. Cook until thick. Serve over toasted English muffin sprinkled with crisp bacon. Serves 4
