Slow Roasted Whole Chicken

Ingredients
- 1 3 to 5-lb whole chicken, extra fat trimmed and removed (and make sure you remove the bag of organs, if yours comes w/ one)
- Olive oil, salt and pepper
- 2 lemons, cut into wedges
- 1 large onion, cut into wedges
- 1 cup dry white wine (or chicken broth)

Step 1
Preheat oven to 275 degrees.
Drizzle a roasting pan with oil; put chicken inside and season with salt and pepper. Stuff lemon wedges and onion in cavity of chicken--place any remaining around chicken in roasting pan. Pour wine or broth in roasting pan.
Roast chicken for 3 hours. Increase oven temp to 400 degrees. Roast 30-45 more minutes, until skin is golden and crisp.
It FALLS apart, it's so tender and juicy! Spoon the pan juices over chicken and/or veggies on the side.
