Ingredients

  • 1 lb. farmer's sausage, cut into bite size pieces
  • 2 onions, coarsely chopped
  • 2 garlic cloves, minced
  • 1 green pepper, coarsely chopped
  • 1 can stewed tomatoes (28 oz / 796 ml)
  • 1/4 cup fresh parsley, chopped
  • 1 tsp dried basil
  • 1/4 tsp dried oregano
  • 1/4 tsp pepper

Preparation

Step 1

In large saucepan; brown sausage over medium-high heat for about 10 minutes, stirring often. Remove with slotted spoon and set aside.

Pour off all but 2 tablespoons (25 ml) drippings from pan. Add onion, garlic and green pepper to pan. Over medium heat, stirring often, cook for 5 minutes. Stir in tomatoes, parsley, basil, oregano and pepper.

Return sausage to pan. Simmer uncovered, stirring occasionally, and heat through for 30 minutes.
