Ingredients
- 2 12 to 16 oz pork tenderloins
- 4 canned chipotle peppers in adobe sauce
- 1/2 c orange juice
- 1/4 c coarsely chopped onion
- 2 T snipped fresh oregano or 2 t dried
- 2 T lime juice
- 1 T honey
- 1 T cooking oil
- 1/2 t salt
- 3 cloves garlic, minced

Step 1
Trim fat from meat. Place meat in plastic bag set in a shallow dish. For marinade, remove any stems from peppers. In a food processor bowl or blender, combine peppers and adobo sauce, orange juice, onion, oregano, lime juice, honey, oil, salt and garlic. Cover and process til nearly smooth. Pour over meat and seal the bag. Marinate in refrigerator for 2 hours, turning bag occasionally. Do not marinade more than 2 hours because the citrus will cause the meat to become mushy.
For a chaqrcoal grill, arrange hot coals around a drip pan. Test for med hot heat above the pan. Place meat on grill rack over the drip pan. Cover and grill for 40-50 min or until done. (160) For a gas grill, preheat and reduce heat to med high. Adjust for indirect cooking. Place the met on a rack in a roasting pan, place on the grill and grill as above.
