Ingredients
- 1 Bag Baby Potatoes
- 2 Tbsp. Olive Oil
- 1/3 C. Mayonnaise
- 1/3 C. Sour Cream
- 2 tsp. Fresh Lemon Juice
- 2 Tbsp. Fresh Dill, chopped
- Salt & Freshly Ground Black Pepper
- 3 Tbsp. Melted Garlic Butter
- 6 Strips Bacon, cooked & crumbled
- 3/4 C. Fresh Corn (approx. 2 cobs)
- 2 Tbsp. Fresh Chives, chopped
- 3 Tbsp. Grated Parmesan Cheese

Preparation
Step 1
Heat oven to 375. Cut potatoes in half, season with salt & pepper, drizzle with olive oil & roast for 15 min. Or till golden brown. In lg. bowl, mix together mayo, sour cream, dill & lemon juice. When potatoes are done, immediately toss in bowl with dressing. Add parmesan, bacon, garlic butter, corn. Mix together, top with chives & serve immediately.
