Banana Nut Bread
- 2 1/2 cups flour (use half whole wheat)
- 2 tsp. baking soda
- 1 tsp. salt
- 1 cup unsalted butter (room temp)
- 2 cups sugar
- 2 cups mashed ripe bananas (4 large)
- 4 eggs
- 1 cup chopped walnuts or pecans
Preheat over to 350F. Grease and flour 2 medium loaf pans (or 8 small).
In a medium bowl, mix flour, baking soda, and salt. Set aside.
In mixer, cream butter and sugar. Beat in mashed banana, then beat in eggs. Remove from mixer and stir by hand the nuts. Add flour mixture and stir until just blended.
Spread evenly in prepared pans. Bake until a toothpick comes out clean, 55-65mins. Cool pans for 10 mins, then turn upside down on a wire rack. Cool completely.
