Tarragon Fish

Mom made this fish for us when she came for a visit in Feb 2010. Great with lime rice and a side of veg.

Ingredients

  • 4 fillets of cod, boneless and skinless
  • 1 cup of non-fat plain yogurt
  • 2 tablespoons fresh tarragon
  • 1/4 cup reduced fat shredded cheese

Preparation

Step 1

Preheat oven to 200 degrees C.

Place fish in a baking dish coated with cooking spray. Season with salt and pepper. Bake uncovered for 2-3 minutes.

Combine remaining ingredients and spread on fish. Place back in the oven and continue cooking until cheese begins to melt.
