Caramelized Brussels Sprouts w/ Spicy Italian Sausage

- 2 lbs Brussels sprouts, tops removed & halved
- 2 T unsalted butter
- 3 oz olive oil
- 2 links so spicy Italian sausage, casing removed & hand pulled into small marble sized chunks.
Preheat oven to 400. In a lg sauté pan, add 1 oz of olive oil. Heat oil, add sausage. Allow sausage to cook & turn golden brown on all sides. Once the sausage has taken on caramel color, remove from pan & place in bowl with papers.
Add remaining oil & butter to pan. Add sprouts, toss to coat with oil/butter. Lower heat to medium & allow sprouts to caramelize without agitating. Turn gently as to not burn. Add sausage back into pan & finish sprouts in oven for 2-3 mins.
Best way to check for oneness is to actually eat one.
When done, season with salt & pepper.
