Ingredients

  • Crab Cakes:

  • 1

    lb crabmeat, cooked

  • cups fresh bread crumbs

  • 1

    cup mayonnaise

  • 2

    tb red bell pepper, chopped

  • 10

    large basil leaves, chopped coarsely

  • 1

    green onion, chopped

  • Salt & fresh ground pepper

  • Flour for dredging

  • 1

    tb vegetable oil

  • Red Pepper Mayonnaise:

  • 1

    red bell pepper

  • vegetable oil

  • 1

    cup mayonnaise

Directions

1) Crab Cakes: In large bowl combine crab, bread crumbs, mayonnaise, red pepper, basil, onion and salt and pepper to taste. Shape into 8 balls. Lightly dredge in flour, shaking off excess. In large frypan heat oil over medium heat. Place crabcakes in frypan and lightly press with the back of the spatula to flatten to 3/4 inch thickness. Fry for 3 minutes per side or until golden. Serve with red pepper mayonnaise. 2) Mayonnaise: Place red pepper on baking sheet and lightly brush with oil. Bake, turning occasionally, at 450 for 15 minutes or until slightly charred. Cool in brown paper bag. Peel off skin, halve and remove seeds. Puree pepper with mayonnaise in food processor.
