VODKA POACHED SALMON

marinate 4, 6 oz filets of salmon in a mixture of ½ c voka and two limes (include the zest of the two limes and juice of the two limes). Marinate it for no longer than 1 minutes. Then put in a oven safe container and cook at 375 for 15 minutes. We tried this on 9/8/2008 and both Jackie and I really liked it. You can add pesto on the top or we also had extra blue cheese butter and that was very good. It took about 25 minutes to cook it.
