Basic Pasta from scratch
- 1 1/2 lbs flour
- 6 fresh ranch eggs
Put the flour in a large bowl, make a well in the center, and add the eggs. Beat the eggs in with a fork until smooth, and then combine well with your hands. Knead, knead, knead, knead, until you have smooth dough. Cover in plastic wrap and chill in the fridge for at least an hour.
Then you are ready to roll! Shape the dough into a flat disk, and run through the pasta machine, two times per setting. Remember to not go all the way down to the thinnest setting of the pasta machine - that makes paper-thin pasta.
