Fish with Beans and Radiccihio

Ingredients

  • 8 tablespoons of olive oil
  • 3 shallots thinly sliced
  • 1 large head of radicchio coarsly chopped
  • 1 can of cannellini beans 15.5oz rinsed and drained
  • 1/3 cup fish broth or chix
  • salt and pepper
  • 6 fish fillets see above
  • all-purpose flour

Preparation

Step 1

heat 2 tablespoons of oil in heavy skillet over medium heat. Add shallots and saute until tender about 2 minutes. Add radicchio and sahut until wilted about 5 minutes. Add beans and broth and cook until beans are heated thourgh and stir often, about 5 minutes. Season with salt and pepper to taste

Meanwhile, heat balance of the oil in large skillet over medium-high heat. Sprinkle fish with salt and pepper and dreage in flour shake off excessive flour. When oil is hot place 3 fillets and fry until golded brown about 3 minutes each side and repeat with balance
