  • 2 c sugar
  • 1 tsp soda
  • 1 1/2 c Canola oil
  • 1 tsp baking powder
  • 4 eggs
  • 1 tsp salt
  • 3 c grated carrots
  • 2 tsp cinnamon
  • 2 c flour
  • 2 tsp vanilla

Step 1

Mix carrots and dry ingredients, add oil and blend. Add eggs, one at a time, beating after each addition. Add vanilla. Bake in a greased 9 x 12 inch pan for 45 minutes. Bake at 350.
