Ingredients
- 1 box orzo
- grape tomatoes sliced in half
- black calamata olives
- good quality feta cheese
- basil, preferably the buds from a plant
- olive oil
- juice from 1-2 lemons
- salt & pepper

Preparation
Step 1
cook the box of orzo according to directions
slice tomatoes, olives, chop basil or add basil buds and crumble feta into a small bowl and set aside
mix together olive oil and enough lemon juice for the dressing and mix into an emulsion and salt and pepper
once orzo is cooked drain from water and shake excess water off
dress orzo with lemon and oil emulsion and combine, add more as needed
add other combined ingredients in bowl at the very end and combine
