Ingredients

  • For Cake:
  • 1/2 cup Crisco
  • 1/2 cup Butter
  • 2 cups Buttermilk
  • 1/2 tsp. salt
  • 5 eggs, separated
  • 2 cups sifted flour
  • 1 2/3 cups flaked coconut
  • 1 tsp. baking soda
  • 1 tsp. vanilla
  • Icing:
  • 8 oz. Philadelphia Cream Cheese
  • 1/2 c. butter
  • 1 pound powdered sugar
  • 1 tsp. vanilla

Step 1

For the Cake:
Beat the egg whites until stiff form, add a pinch of salt while beating. In a large bowl, combine Crisco, sugar, butter and vanilla until fluffy. Add 1 egg yolk at a time, beat well after each egg. Sift flour, salt and baking soda together. Add this mixture alternating with buttermilk addition, mixing well. Add coconut. Fold egg whites into batter. Prepare 3 floured layer pans. Bake in 350 degree oven until golden brown, approximately 20 minutes. Do not overcook!

For icing:
Mix all ingredients until smooth. Add nuts as topping if desired.
