Cajun Salmon

Ingredients
- 2 Tblsp butter
- 4 4-ounce salmon filets
- 2 Tblsp Cajun seasoning (like Emeril's Essence)
- 2 cloves garlic, pressed or minced
- 1/4 cup balsamic vinegar
- 1/4 cup apple juice (you can use 1/2 cup vermouth instead of vinegar and juice)
- lemon wedges

Step 1
In a large skillet over medium-high heat, melf half the butter. Add the salmon and brown on each side, about 2 minutes per side. Remove salmon and keep warm. Add remaining butter to the pan, and add Cajun seasoning and garlic. Cook for 2 minutes, stirring constantly. The add the vinegar and juice and cook for 3 minutes or so, again stirring constantly. Add salmon back to the pan and cook until fish flakes when tested with a fork. Serve with lemon wedges.
