Ingredients

  • 5 # hamburg (not too lean)*
  • 5 Tbsp tender quick salt
  • 2 1/2 tsp mustard seed
  • 2 1/2 tsp garlic powder
  • 2 1/2 tsp cracked pepper
  • 1 tsp hickory salt
  • 1 tsp liquid smoke

Preparation

Step 1

Mix all togetherr (well like meatloaf). Cover and refrigerate. Each day take out and mix again. On third day, shape into rolls (4 rolls bout 10-12: long approximately). Bake in oven on broiler pan at 150 degrees for 4 hours. Then tun over and cook for 4 more hours. Coo. Wrap and refrigerate or freeze.

*The cheaper the hamburg, the better the sausage.
