Ingredients

  • 1 pound backfin or lump crabmeat
  • 4 saltine crackers crumbled
  • 1 tablespoon fresh minced parsley
  • 1/2 teaspoon worcestershire sauce
  • 2 to 3 shakes of tobasco sauce
  • 1 egg beaten
  • 1 cup mayonnaise divided
  • 1/2 teaspoon old bay seasoning
  • 1/2 teaspoon salt
  • 1/8 teaspoon freshly cracked pepper
  • paprika
  • fresh parsley springs
  • 1 lemon sliced for garnish

Preparation

Step 1

Preheat oven to 350 degrees.

Gently pick through crab to remove shell. Don't break apart lumps of crab. Combine next 9 ingredients except for 1/4 cup mayonnaise. Mix well. Gently fold in crab. Don't overmix. Form into 6 cakes. Place on foil covered cookie sheet. Spread each cake with equal portion of reserved mayonnaise. Sprinkle with paprika. Bake for 20 minutes or until golden brown. Don't overbake. Garnish with parsley and lemon.
