Ingredients
- 1 1/2 lb fresh ground pork butt
- 3/4 tsp cumin
- 1 1/4 tsp dried oregano
- 1 tsp dried chives
- 1 tsp garlic powder
- 1/2 tsp ground corriander
- 1/3-1/2 cup Green chiles (select your heat)
- 1/2 -1 tsp ground green chile powder
- 1/4 tsp celery powder
- 1/3 tsp caraway seeds
- salt and pepper to taste

Preparation
Step 1
grind pork (I like 1/2 course ground and 1/2 medium grind)
add seasoning and chiles
mix by hand
test fry a small patty to test flavoring and adjust accordingly
I like to make 1 in balls of sausage and freeze, then package to be stored in freezer. Pull out what you want and let thaw. each ball can be smashed flat to give a small patty
