- 1/4 cup fresh lemon juice
- 1/2 tsp Dijon mustard
- 1/2 tsp salt
- 1/4 tsp pepper
- 3/4 cup extra virgin olive oil

Whisk together lemon juice, mustard, salt and pepper until salt dissolves. Add oil in a slow stream, whisking until emulsified.
*Dressing can be made 1 day ahead and chilled in an airtight container.
