Mona's Crab Cakes

Ingredients

  • 1 lb crab meat - backfin preferably and NOT from Indonesia (it is too sweet)
  • salt and pepper lightly
  • 1 egg beaten lightly
  • 1 tsp wet mustard
  • 1 heaping tablespoon mayo
  • 3/4 c cracker crumbs (not seasoned)
  • 1/2 cup milk
  • worchestershire sauce
  • tabasco
  • bell pepper

Preparation

Step 1

Pour 1/2 cup milk over crumbs to moisten
add dash worchestershire
add dash tabasco
add 1 tsp finely chopped green bell pepper (this makes a big difference)
Add rest of ingredients and mix LIGHTLY. Do not overwork or squeeze. Make into cakes. Fry in skillet with 2+/- heaping T shortening. Just takes a couple of minutes per side until lightly browned
I sometimes also add a dash of Old Bay on top but not always
