Ingredients

  • 1/2 lb. lean sliced deli ham, cut into 1” pieces
  • 1 medium onion, chopped
  • 3 uncooked potatoes, cut into 1/2” cubes
  • 1 can (16 oz.) corn, drained, liquid reserved
  • 1 bay leaf
  • 4 cups low fat milk
  • 4 cans (10.5 oz.) minced clams, drained, liquid reserved

Preparation

Step 1

Coat pan with nonstick spray and brown ham and onions. Pour reserved liquid from clams and corn into measuring cup and add enough water to this liquid to make 4 cups. Add this mixture to cooker along with the potatoes, corn and bay leaf and cook under high pressure for 10 minutes. Quick-cool under cold water. Add milk and clams and heat GENTLY, being careful not to boil. Remove bay leaf and season to taste.
