Chicken Ragout with Pasta

Ingredients

  • 1 large onion
  • 1 large red or yellow pepper
  • 12 oz boneless chicken breasts
  • 1 tbs olive oil
  • 1 14 1/2 oz can pasta ready diced tomatoes in oil with garlic and spices or use pasta ready diced tomatoes with three cheeses.
  • 1 8oz can tomatoe sauce
  • 1/2 tsp kosher salt
  • 1/2 tsp sugar
  • 1/4 cup freshly grated parmesan cheese
  • 1 pound penne pasta, freshly cooked and drained

Preparation

Step 1

1. Peel onion, halve lenghtwise and cut lenghtwise in thin slices
2. Halved, seeded and chopped pepper
3.Cut chickn in bite size pieces4.
4. Heat oil in large non stick skillet over medium high heat, add onion and pepper, cook about 4 minutes, stirring frequently until onion is lightly browned. Place pasta in salted boiling water and cook till el dente, drained and cover to keep warm.
5. Add chicken and stirfry 2 minutes or until no longer pink
6. Add pasta ready tomatoes,tomato sauce, sugar ans salt.
7. Cover skillet and reduce heat to medium low and simmer 4 minutes or until chicken is tender.
8.Remove from heat and stir in parmesan cheese, toss with hot pasta
9. Serve with Crusty bread and salad
