Chicken Broccoli Casserole

Ingredients

  • 16 ounces boned and skinned chicken breasts -- cooked
  • 1 bunch broccoli
  • 12 ounces mushrooms
  • 3/4 teaspoon celery seed
  • 8 ounces mozzarella cheese, part skim milk
  • 12 ounces fat-free cottage cheese
  • 3 teaspoons lemon juice
  • 12 ounces evaporated skim milk

Step 1

Cut cooked chicken into chunks. Steam broccoli, drain and place in casserole. Add mushrooms, celery seed, and dash of salt. Put layer of chicken over this. In blender, mix milk, cottage cheese, lemon juice, salt and pepper until smooth. Pour over chicken. Top with the mozzarella cheese. Bake 350 degrees for 20-30 minutes.
I can't remember what size casserole dish I used way back then. I think maybe a 11 x 7 in.
