Ingredients

  • Batter: 1 c flour
  • 2 Tbsp cornstarch
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 egg
  • 1 c beer
  • 1/2 tsp ground cumin
  • Sauce: 1/2 c plain yogurt
  • 1/2 c mayo
  • 1 lime, juiced
  • 1 jalapeno pepper, minced
  • 1 tsp minced capers
  • 1/2 tsp dried oregano
  • 1/2 tsp dill
  • 1 tsp ground cayenne pepper
  • Oil for frying
  • 12 oz pkg corn tortillas
  • 1 lb cod fillets, cut into 2 oz pieces
  • 1/2 head medium cabbage, shredded

Step 1

1. Make batter - combine flour, cornstarch, baking powder and salt. Mix egg and beer together, then stir quickly into the flour mixture.

2. To make sauce - mix together yogurt and mayo. Gradually stir in lime juice until consistency is slightly runny. Add jalapeno, capers, oregano, cumin, dill and cayenne. Set aside/refrigerate.

3. Heat oil in deep-fryer to 375 degrees F

4. Dust cod pieces lightly with flour - dip into batter and fry until golden brown and crisp. Drain well on paper towels. Lightly fry tortillas, not too crisp.

5. Place fried fish in tortilla, top with shredded cabbage and sauce.
