Ingredients
- 2 c. sugar
- 1 1/2 c. canola oil
- 4 eggs
- 2 C. unsifted flour
- 2 tsp. Baking powder
- 1 tsp. Salt
- 2 tsp. Soda
- 2 tsp. Cinnamon
- 3 c. grated carrots
- 1 c. chopped walnuts

Preparation
Step 1
Mix sugar, oil and eggs; beat well. Sift all dry ingredients and add to sugar and oil mixture. Mix well. Add by hand carrots and nuts.
Preheat oven to 350 degrees. Bake in two 9-inch square pans 40 to 45 minutes or three 8 inch round pans 35 minutes. Grease and flour pans well.
