Carrot Cake with Cream Cheese Frosting

Ingredients
- Cooking oil spray
- 2 cups white whole wheat flour
- 4 tsp baking powder
- 1/4 tsp salt
- 2 tsp cinnamon
- Zest of 1 orange
- 5 large carrots, grated
- 2/3 cup brown sugar
- 1/2 cup golden raisins
- 2 eggs
- 1/3 cup canola oil
- 1/3 cup orange juice
- 1 8 oz. package cream cheese, room temperature
- 1 cup powdered sugar
- 1/4 tsp vanilla extract

Preparation
Step 1
Preheat oven to 350 degrees.
Lightly spray two cake pans with oil.
In a large bowl, whisk flour, baking powder, salt cinnamon and zest.
Add the carrots, brown sugar and raisins.
Stir with a wooden spoon until well mixed. Set aside.
In a medium bowl, whisk together the eggs, oil and juice.
Add to dry ingredients, mix well.
Transfer to prepared baking pans and smooth on top.
Bake 40 minutes, or until toothpick is inserted and comes out clean.
Cool completely before frosting.

Frosting:
Whip cream cheese and powdered sugar until light and fluffy, about 3 minutes.
Add vanilla and whip another minute.
