Ingredients

  • 1 1/2 cups flour
  • 1 cup sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 egg
  • 1/2 cup mayonnaise
  • 3 bananas, mashed
  • 1/2 cup chocolate chips

Preparation

Step 1

1. Preheat oven to 375 degrees. Grease or line 2 muffin pans.

2. In a large bowl, mix flour, sugar, baking soda and salt. In a small bowl, beat together the egg and mayonnaise. Add to dry ingredients, stirring until moistened, then stir in mashed bananas.

3. Spoon batter into muffin pans to about 3/4 full and top with chocolate chips. Bake 20 minutes.
