French Onion Soup

Ingredients
- 2 tablespoons butter or margarine
- 2 medium onions sliced
- 1/4 cup sherry
- 2 14 oz cans beef broth, undiluted
- 2 teaspoons Worcestershire sauce
- 1/8 ounce ground thyme
- 1/2 teaspoon pepper
- 1 teaspoon salt
- 1 teaspoon Dijon mustard
- 4 1/2 inch slices French bread toasted
- Swiss cheese shredded

Preparation
Step 1
Separate onions into rings; cook in butter in Dutch oven over medium heat for 25 to 30 minutes, stirring frequently.
Add sherry to onions; cook for 5 minutes.
Add remaining ingredients (except bread and cheese) and bring to a boil.
Cover, reduce heat, and simmer 1 hour.
Ladle soup into 4 ramekins, top each with a slice of bread, spinkle several tablespoons of cheese on bread.
Broil 5 to 6 inches from heat until cheese melts.
