Mom's Coconut Custard Pie

Another one of my mom's recipes with the ingredients and very few instructions!

Ingredients

  • 2 unbaked 9" pie shells
  • 5 egg, slightly beaten
  • 1/2 cup sugar
  • 1/4 tsp salt
  • 1 3/4 tsp vanilla
  • 2 3/4 cups milk, scalded
  • 1 cup coconut, divided
  • fresh groung nutmeg

Preparation

Step 1

Preheat oven to 475.
Thoroughly mix eggs, sugar, salt and vanilla. Slowly pour in scalded milk. Divide between 2 pie shells. Sprinkle 1/2 cup coconut over top of each pie and dust lighly with nutmeg.
bake at 475 for 5 minutes, then at 425 for 10 minutes or until knife inserted in center comes out clean.
