Sauteed Cucumbers

Ingredients
- 2 large cucumbers, peeled, seeded and cut julienne
- 2 tsp salt
- 1 cup whipping cream
- 2 tblsp chopped fresh dill
- freshly ground pepper
- 2 tblsp butter

Step 1
Toss cucumber with salt in collander and let drain 20 minutes. Rinse under cold running water and let drain again. Pat dry with paper towel. Meanwhile, boil cream, dill and pepperin small saucepan until mixture is reduced by half, about 20 minutes. Set aside. Melt butter in large skillet over medium-high heat. Add cucumber and saute until crips-tender, about 3-5 minutes. Stir in cream mixture. Cook until heated through, about 2-3 minutes. Serve immediately.
