Ingredients
- 6 tbsp butter
- 15 medium onions, halved lengthwise and sliced thinly
- 2 tsp salt
- 1 tbsp sugar

Preparation
Step 1
In 8 quart heavy pot, melt butter over medium heat. Add onions and salt. Cook, sitting often, until softened and just beginning to brown, 35 minutes.
Reduce heat slightly. Add sugar and cook, stirring often to scrape up any browned bits, 30-40 minutes.
When done, onions should be deep golden brown and have a jam like consistency. Remove from heat, season with salt. Let cool completely.
To store, refrigerate in airtight container up to 2 weeks.
