Herbed Beef Kabobs

Ingredients

  • 1 lb beef kabob cubes
  • 1/2 red bell pepper, cut into 8 pieces
  • 1/2 yellow bell pepper, cut into 8 pieces
  • 8 small fresh portabello mushrooms
  • MARINADE
  • 1/4 cup olive or vegetable oil
  • 1/4 cup red wine vinegar
  • 2 cloves garlic, finely chopped
  • 1 Tbsp chopped fresh or 1 tsp dried rosemary, crumbled
  • 1 Tbsp chopped fresh or 1 tsp dried oregano
  • 1/2 tsp salt

Preparation

Step 1

1. Mix all ingredients for marinade in shallow glass or plastic dish or ziplock bag.

2. Add beef, peppers and mushrooms to marinade; stir to coat. Cover dish or seal bag and refrigerate at least 4 hours but no longer than 24 hours.

3. Heat coals or gas grill for direct heat. Remove beef and vegetables from marinade; discard marinade. Thread beef and vegetables alternately on each of four 10-12" metal skewers.

4. Cover and grill kabobs 4-5" from medium heat 7-12 min. turning once, until vegetables are tender and beef is desired doneness.
