Ingredients
- 1 1/4 lbs beef chuck, cut in 1 inch cubes
- 1 Tbsp oil
- 1 1/2 Tbsp flour
- 1 tsp salt
- dash of pepper
- 3/4 tsp chili powder
- 2 cloves garlic, minced
- 1 med onion
- 1 green pepper, cut in chunks
- 1 can (10.5 oz) condensed beef broth
- 1 broth can water
- 1/4 tsp drid oregano leaves
- 4 medium potatoes, peeled, sliced
- 2 med carrots, peeled, sliced

Preparation
Step 1
Heat oil in dutch oven
Toss beef in mixture of flour, salt and pepper.
Brown well on all sides in hot oil.
Add chili powder, garlic and onion. Saute lightly.
Add beef broth, water and oregano.
Bring to boil. Cover. Reduce heat and simmer for about 1 hour, stirring time to time.
Add vegetables. Simmer another 20 minutes or until meat is tender and veggies are tender-crisp.
