Rigatoni with Vodka Sauce

Ingredients

  • 6 oz tomato paste
  • 4 cloves garlic minced
  • 2 tbs extra virgin olive oil
  • 1 onion, finely chopped
  • 9 plum or roma tomatoes, peeled and finely chopped
  • 3 cups of heavy cream
  • 1 tsp kosher salt
  • Pinch of cayenne pepper
  • 4 oz chopped pancetta
  • 3 tbs vodka
  • 1 cup freshly grated parmesan cheese
  • 1 pound of Rigatoni

Preparation

Step 1

1. In large skillet over medium heat, heat extra virgin olive oil, add garlic and onions and pancetta , saute til onions are tender.
2. Add tomatoes, tomato paste,and heavy cream, season with salt to taste.Bring sauce to a boil and slightly thicken
3. Cook Rigatoni to El Dente
4.Turn sauce to low heat, add a pinch of cayenne pepper, add parmesan cheese and stir to combine
5. Toss with Rigatoni.
6. Serve with a salad and bread
