Ingredients
- 1-2 eggplants
- Eggs
- Flour
- Milk
- Italian bread crumbs
- Olive oil
- Spaghetti sauce
- Provolone cheese
- 9 x13 baking dish

Preparation
Step 1
Peel eggplant and cut into slices.
Mix milk and eggs in a small bowl and in another bowl mix flour and bread crumbs.
Heat skillet with olive oil. Dip eggplant into milk mixture and then flour mixture. Brown eggplant in the skillet just a little.
Pour a small amount of sauce on the bottom of the baking dish. Layer eggplant and put cheese on top. Pour more sauce and continue doing same until eggplant is used up.
Bake at 350 and check at 30 minutes. Continue baking if needed.
