Rhubarb Custard Pie
Attributed to Donna Hosley. A Friend of the family when I was growing up in North Baltimore, Ohio.
- 2 Eggs (beaten)
- 1 1/2 C. Sugar
- 2 t. Milk
- 3 T. Flour
- 2 T. Butter
- 3 C. Rhubarb, cut into 1" pieces
- unbaked Pie Shell
1. Mix first 4 ingredients together until well blended.
2. Cut Rhubarb stems into 1" pieces, then put it in the unbaked Pie Shell and Pour the first 4 ingredients over the Rhubarb and dot the top with Butter.
3. Bake @ 350 degrees until done, the custard around the Rhubarb will be a little brown. You can cut a piece of Aluminum Foil to cover the crust, so it doesn't get to brown.
