Spicy Peanut Sauce with Noodles

Ingredients
- 1 lb pasta
- 4 tbs sesame oil
- 1 (green) onion
- 1/3 cup creamy peanut butter
- 1/2 cup honey
- 1/4 cup chopped nuts (I used cashews but I suppose any will do)
- 3 tbs vinegar
- 2 tbs ginger
- 2 tbs chopped garlic
- dash of lemon juice
- cayenne and chili pepper to taste
- Toasted Sesame seeds
- salt to taste
- 1/3 cup- 1 cup of hot water

Preparation
Step 1
Salt a pot of water for the pasta. Add the pasta as soon as it boils. Drain, toss with 2 tbs of sesame oil and set aside.
Add the rest of the sesame oil to a pan and heat to medium/med high. Add chopped onion, ginger, garlic, cayenne, and chili pepper. Saute for a few minutes. Add peanut butter, honey, vinegar, lemon juice, and 1/3 cup hot water. Stir till combined, let simmer and check taste combo. For every minute or so it takes to tweak the flavors, you will have to add more water-but keep in mind this is supposed to be a hearty sauce.
Serve sauce over noodles, garnish with nuts, and sesame seeds. Enjoy!
This can also be prepared with chicken, or tofu.
