Country Ribs with Mango BBQ Sauce

Ingredients

  • RUB:
  • 3 pound country ribs, trimmed of excess fat
  • 1 tablespoon chili powder
  • 1 tablespoon kosher salt
  • 1 tablespoon black pepper
  • 2 teaspoons dried pasilla chiles, crushed
  • 1/2 teaspoon ground ginger
  • Zest of 1 lime
  • SAUCE:
  • 1/2 cup onion, diced
  • 1 tablespoon garlic, minced
  • 2 teaspoons fresh ginger, minced
  • 1 1/2 cups mango juice
  • Juice of 1 lime
  • 1/3 cup honey
  • 3 tablespoons yellow mustard
  • 1 teaspoon chili powder
  • Salt, to taste
  • Pepper, to taste

Preparation

Step 1

Combine first 6 ingredients in a bowl and rub onto ribs. Cover ribs on a baking sheet with foil, crimping it around the edges so steam can't escape; the steam keeps the ribs from drying out.

Slow roast the ribs in the oven for about 2 hours in a 300°F oven. If the meat pulls away from the bones they are ready to grill.

To prepare the sauce, sweat onion, garlic, and ginger in oil in a saucepan over medium heat until onions soften, 3 to 4 minutes. Add mango and lime juice, increase heat to high, and reduce until thickened, about 15 minutes. Stir in honey, mustard, and chili powder; season. Transfer sauce to a
container, cover, and store in the refrigerator up to 1 week.

Baste ribs with BBQ sauce just before taking the ribs off the grill.
