Ingredients

    eggs, beaten

  • 1/2

    tsp ground cinnamon

  • 3/4

    cup white sugar

  • 1/4

    cup sifted all-purpose flour

  • 1/4

    cup evaporated milk

  • 1

    Tbls fresh lime juice

  • 2

    cups pureed mango

  • 1

    9" pie crust, baked

Directions

Preheat oven to 350F. In a large bowl mix together mango puree, lime juice, and evaporated milk. In a separate bowl thoroughly mix flour, sugar, and cinnamon. Gently stir flour mixture into mango mixture. Whisk until smooth, then mix in beaten eggs. Pour mixture into pastry shell. Bake 30 minutes. Chill before serving.
