Wild Rice, Bean and Artichoke Salad

Ingredients

  • 8 ounce can garbanzo beans, drained and rinsed
  • 8 ounce can black beans, drained and rinsed
  • 6 ounce package long-grain and wild rice
  • 7 ounce jar marinated artichoke quarters
  • 6 green onions, sliced
  • 1/2 cup chopped green bell pepper
  • 12 ripe olives, sliced
  • 1 celery rib, sliced
  • 1/3 cup mayonnaise
  • 3/4 teaspoon curry powder
  • Leaf lettuce

Preparation

Step 1

Cook rice according to package directions.

Drain artichokes, reserving 3 tablespoons liquid. Stir together rice, beans, artichokes, green onions, bell pepper, olives and celery.

Stir together reserved artichoke liquid, mayonnaise, and curry powder; toss with rice mixture. Cover and chill for several hours.

Serve on lettuce lined plates.
