Griddled Mango Chicken with Coleslaw

Made this along with a number of other salads for my colleagues when they came to my house for a team meeting last week. This was nice and fresh and works well as part of a lunchtime buffet.
Ingredients
- For the coleslaw:
- 4 chicken breasts, skinless and boneless
- 1/4 tsp smoked paprika
- 1 tbsp lemon juice
- 1 ripe mango, peeled and coarsely grated
- 2 tbsp chopped coriander
- 3 tbsp lime juice
- 1/2 white cabbage, shredded
- 2 large carrots, peeled and grated
- 1 small red onion, peeled and thinly sliced
- 1 tbsp white wine vinegar

Preparation
Step 1
1) Slice chicken into strips. Place in a shallow bowl with the paprika and lemon juice. Mix together well.
2) Cook the chicken under the grill for 5-10 minutes or until cooked through. Leave to cool.
3) Make the mango dressing by mixing grated mango, coriander, 1/2 tsp salt and 2 tbsp lime juice with a good twist of black pepper.
4) Make coleslaw by mixing cabbage, carrots, red onion, vinegar and remaining lime juice with some seasoning in a large bowl.
5) Arrange sliced chicken on top of coleslaw. Spoon the mango dressing over the top and cover. Keep in fridge until ready to eat.
