    ounces canned chunky stewed tomatoes

    tablespoon dried oregano

  • 1

    egg, beaten

  • 1

    cup dry bread crumbs

  • 1/4

    cup grated Parmesan cheese

  • Cajun spice

  • 1

    pound flounder or orange roughy

  • Olive oil spray

    ounces spaghetti, cooked

Directions

Prepare pasta according to package directions. Bring tomatoes and oregano to a simmer in saucepan over medium heat; add cooked pasta and keep warm. Combine bread crumbs and Parmesan cheese on a dinner plate. Dip fish in egg, shake off excess, then in crumbs. Spray oil in large non-stick skillet and heat over medium-high heat. Add fish, sprinkle with Cajun spice, cook about 5 minutes, turn and repeat. Serve over pasta.
