vCheese and Onion Fondue

Ingredients

  • 1 oz butter
  • 1 large onion, very finely chopped
  • 2 tsp plain flour
  • 5 fl oz thick sour cream
  • 8 oz grated Gruyere cheese
  • 8 oz grated Cheddar cheese
  • 2 tbsp chopped fresh chives
  • pepper
  • small cooked potatoes and small cooked sausages, to serve

Preparation

Step 1

Melt the butter in a saucepan, add the onion and cook for 4 or 5 minutes until soft but not brown. Stir in the flour, then add the cream and cook for a couple of minutes. Continue to cook while adding cheese and heat until mixture is smooth, stirring frequently. Add the chives and season with pepper. Pour into the fondue pot and serve with small cooked potatoes and small cooked sausages.
