Ingredients
- 4 T. butter
- 4 T. flour
- 3 c. chicken broth
- 1 lb fresh mushrooms-stemmed and sliced
- 1 c. finely chopped onions
- 2 c. milk
- 1 c. whipping cream or 1/2&1/2
- 1/2 t salt
- 1/4 t. white pepper
- 1/4 t red pepper
- 3 T. Madeira or sherry
- 1/4 chopped parsley

Preparation
Step 1
Melt butter in a large saucepan. Add flour cook stirring constantly over medium heat. Add chicken broth, whisk constantly 2 to 3 minutes. Add mushrooms and onion. Simmer 30 minutes stirring occasionally. Gradually stir in milk and cream. Simmer 10 minutes. Add salt and pepper. Stir in wine and parsley and serve.
